That looks so tasty Lily. Our favorite brunch place here in Copenhagen does a similar scrambled egg but I think they use a different ratio of onion to chilli to tomato. We'll definitely try yours. And my husband is now after your black bean recipe as we're doing our own 'taco van' to serve a snack at my Mums 90th birthday in 10 days time! 😁
Thank you Jacqui. To be honest you can put as much as you like of onions and tomatoes (that ratio is a personal preference), the only ingredient you have to watch out for is the Serrano. That pepper is spicy. I'm so glad he is interested on the black beans. Let me know if you guys like them. You have to share some pictures of the "taco van".
